FULL TIME PROGRAMS
The FBI Chef School and Patisserie Academy in Johannesburg does not only specialize in sugar and chocolate craft, but also teaches full Culinary Programs resulting in a well balanced all-rounded chef. It is here where aspiring chefs will have the opportunity to train in this time-honored culinary art at an internationally approved institution under a highly qualified, internationally chef.

City and Guilds International approved courses offered:
• 8065-02 Food Preparation and Cooking (Culinary Arts)  12 Months Program
• 8065-03 Food Preparation and Cooking (Patisserie) 12 Months Program
• 8065-04 Advanced Food Preparation and Cookery Supervision -(Patisserie), 18 Month Program

City and Guilds International Training  Program in food Preparation and Cookery (Culinary Arts) 
A full time 12 month hands-on training guiding students through the intricate details of culinary studies.

City and Guilds International Training  Program in Food Prep  and Cookery (Patisserie) 
A full time 12 months hands-on training program guiding students through the intricate details of patisserie studies

Subjects include:
Health, hygiene and safety, cold and hot egg based desserts, set and moulded dessert, frozen and chilled desserts, baked fermented products and desserts, sugar and chocolate craft, introduction to classical desserts, decorating skills

City And Guilds Advanced Training Program in Food Preparation and Cookery Supervision- Patisserie 
A fulltime 18 month Advanced Training program in cookery supervision together with the practical component of the advanced training in patisserie studies approved by City & Guilds international. Subjects include: safety at work, hygiene, fire fighting, first aid, budgets, costing and control, paste based products, cakes, sponges, meringue based products, gelatine based desserts, chemically aerated products, fruit based and  egg set desserts, frozen desserts, baked fermented products, creams, fillings and glazes, pastry sauces, decorative mediums, sugar and chocolate, kitchen management, supervision, showpieces, wedding and other special cakes, friandise.

Students are required to complete 6 months of industry experiential training whilst completing this course. Placements are done by the FBI and involves practical patisserie and bakery placements which will bring together the high level of training received at the FBI and the practical requirements of the highly competitive hospitality industry.
